Vaangi Baath Masala - 100g

A boldly flavoured spice blend for South Indian brinjal rice.

Ingredients: Cinnamon, cloves, cardamom, mace, poppy seeds, coriander seeds, urad dal, channa dal, cumin, fenugreek, dried coconut and red chillies.

Preparation: Cook rice and allow it to cool. Temper oil with mustard seeds, dals, peanuts, chillies, curry leaves and asafoetida. Cook chopped brinjal with turmeric and tamarind extract. Stir in 3 heaped tablespoons of masala, a little jaggery and salt, then mix through the rice and heat until ready.

Storage: Store in the freezer.
